What I used to do is if you want it a bit sweeter but still strong brew it the same but put a drop of the juice inside and it works a treat

Get some powdered tannin. It's cheap and easy to use.

Cheers Dean, I'm trying to build the channel, it will take time. I've bought an air still and have just started experimenting with it, films up on stilling around Christmas(ish) probably.

Wow, nice one bruv. You could add but honey in the bottle as well add bit of sugar in it if you want to have more honey-flavored. Also, did you do make ciders as hobby or you used to work in brewery factory hence your skills alone?

Hi Aaron, thanks for the comment. Yes adding honey in the bottle would be a good idea also. I've never worked in alcohol production (although I'm considering it for the future). My dad was a home brewer so I learned my skills from him during childhood and teen years. I was an active brewer 25 years ago, but packed it in. I restarted during lockdown through boredom and haven't looked back since. Cheers!

7% is the optimum ABV to hit the bloodstream immediately.

@@MossHomeandGarden It will but the effect will be slower as your body searches for liquid to water the alcohol down in your stomach.

Multiply everything I did by 2.5 and that should be about right I think. Enjoy!

Good to see someone boiling honey to ferment it. Using carbonation pills is depriving you of the joys of disgorgement .. you could have added sugar to get the alcohol up to 12%.. but a good start…..
