Card Captor Sakura Rare Cheesecake
Makes a 6 inch cake
Base
50g graham cracker
40g butter
Cheesecake
200g cream cheese
200g whipping cream
40g sugar
80g honey
2 tbsp lemon juice
Gelatin 10g
60g water
*tip1: cream cheese and whipping cream should be room temperature to prevent lumps
*tip2: microwave gelatin 10g + 60g water for only 30s, it will bubble and flatten once the microwave is opened~ it should become a thick syrup-like consistency
Decoration
Mint
Strawberry sauce
Strawberry sauce not included in recipe so I’ll give mine :)!
450g strawberries, small diced
Enough water to cover strawberries
1/2 cup sugar (strawberries currently not in season)
Bring to a boil, then lower heat to medium-low and cook until thickened, stirring occasionally. Once reduced to 1/3, strain and let cool to room temperature
tip: at no point in time should you crush/flatten the strawberries, it will not make a clear strawberry syrup
