The ceviche that Rick made is amazing! I don't get why my Peruvian brothers are talking shit saying it's not good or nasty. Mexico has it's variation and Peru has their preparation, please respect! Rick Bayless is the man!!!

rlanderos80 first time I ever heard of or tried ceviche was in Guatemala. As far as I was concerned, it was a Guatemalan dish. Then I find out that there are different versions from different countries... they're all good! It's seafood for crying out loud! Ceviche and an ice cold beer...ahh.

Nah, i interview him years ago and he was so racist, not that nice as seen on TV, what a shame i was very exiting about meeting and interview him, the production crew couldn't believe it :(

i live in the north of mexico coast of california and we keep the ceviche basic and never dry the ceviche and put dont canned stuff in it only use fresh vegetables and the fish or shrimp be from local market very fresh never buy packed fish then we put in on top of a tostada and you can add ketchup spice or guacamole on it as you like depends on your paladar. And the agua chile aint peruvian people around here been cooking with lemon for centuries here. Im not a chef but my mum is badass at cooking the tip for the ceviche is the freshness and eat it cold in a hot weather.

I saw this recipe this dude did on Vice Munchies, the Atomic Special ceviche, with mayo and ketchup. And like I wanted to make it so bad haha. It sounds horrible, served in a ice cream cup but god it looked so delicious and pink.

typically Mexicans dont put avocado on ceviche. But you're right I've always found it weird when avocado is paired with ceviche and have been turning the corner on putting tomato on my ceviche as well (got another ingredient I use instead) but you're right tomato and avocado on citrus is not appetizing.

Acids like lemon juice, lime juice & vinegar break down raw meat, creating small pathways, thus allowing the marinade to deeply penetrate the meat. The scientific term for this breakdown is "denaturation," which is the process in which protein loses its structure by application of a strong acid, base, salt, alcohol or heat.The process that cooks meat with heat in the oven is the same one that cooks it with acid - differences in taste and texture notwithstanding.

Ceviche is about the ONLY recipe that IS from Peru. Everyone agrees. It didn't even travel until this past century, to other countries.

El seviche, sebiche, cebiche o ceviche (según la RAE, puede ser escrito de estas formas) es un plato consistente en carne marinada ―pescado, mariscos o ambos― en aliños cítricos. Diferentes versiones del cebiche forman parte de la culinaria de los países latinoamericanos litorales del Océano Pacífico, como son Colombia, Costa Rica, Chile, Ecuador, El Salvador, Guatemala, Honduras, México, Nicaragua, Panamá, Perú y Puerto Rico. No hay estudios definitivos que liquiden el debate acerca de su país de origen; las hipótesis indican que la región del Perú es la más probable, sin embargo el plato se habría originado mucho antes de que la idea de Estado nación siquiera hubiese sido pensada.

Algunos les atribuyen el origen del nombre, a los marineros ingleses que al llegar a los puertos peruanos degustaban un plato típico al que ellos llamaban “SEA BEACH” (Pescado en la Playa) y el nombre viene derivado de esa denominación. Otra fuente señala, su origen de pescado “ENCEBOLLADO” con limón, y de la conjunción de estos dos conceptos nace el “ENCEBICHADO” y de allí el “CEBICHE”. Algunos investigadores, como el historiador Juan José Vega, encuentran el origen de nuestro “SEVICHE” en la palabra árabe “SIBECH” - que es con la que se designa a la comida ácida - y relata cómo las mujeres moriscas que fueron tomadas como botín de guerra por los Reyes Católicos en Granada y que después llegaron al Perú acompañando a las huestes de Pizarro, agregaban zumo de naranjas agrias primero y después jugo de limón al pescado crudo con ají y algas que preparaban los peruanos prehispánicos.

I like mexican food, but i could`n help to giggle when he said at 04:49 "is all about the freshness" when the Ceviche was sitting on the display, God knows for how long :{ . If i really want freshness i`ll try Peruvian Ceviche, they will make it, right on the spot, that`s freshness and flavor is all about.

I understand how citric acid "cooks" the proteins in meat, but the shrimp that he said "putting a little salted lime juice on top of" is not exactly cooking, in my opinion. It has to have at least a little time to marinate.

Rick keeps mentioning peruvian ceviche but his version doesnt have any trace.. This is a mexican ceviche totally different, not fresh enough..It is the same version throughout latin america.. Peruvian ceviche is its own league, totally different. Raw fish marinated in lime less than 30 min. Salt is used first to open the pores. and no olives or sugar, use sweet potato on the side to balance the spiciness

is really an individual choice, depends on how "cooked" you like your fish...5 min. is a rare degree of doneness, 10 to 20 min would be the ideal time.

i don't think you should say "typically mexicans" because everyone cooks differently i've seen avocado accompany seafood in mexico and US and that includes alongside ceviche and I have always had tomatoe with my ceviche

Sorry, but ceviche is definitely not Peruvian. Citrus fruit came from Europe and the Moors made lemon cured seafood for centuries. Why do Peruvians try to claim to be the originators of it?

na na na el ceviche se origino en peru y es desde ese pais que se propagó la receta por toda america y en cada pais se le agregan o adicionan ingredientes y al ser mexico el ultimo pais al que llegó el ceviche pues llego con 200 ingredientes para su preparacion , y pues para que no hacerse higado se sabe que el mas rico y ganador de cientos de concursos de cocina internacional es el peruvian ceviche y punto
