As a dalgona chef (Not bragging), I would like to share my knowledge after failing multiple times and by the time I mastered cooking it. Also, credits to the creator of this video! :) 1. Remember to put the normal amount of sugar on the ladle, because if it is too much sugar, It will eventually end up like 7:58 which you can see that there is a bit of sugar on the stove. 2. Always monitor the heat and turn it to low heat, but when you see the sugar smoking or bubbling, that means that your sugar will be burned and that the heat is too high. 3. Once the dalgona is in a brown texture, always check if all the small pieces of sugar are dissolved, if not, your dalgona will have small bumps. 4. When the sugar is melted, here is the most important part, Put a small amount of baking soda, because if you put too much, your dalgona will be too fluffy and it overflow from the ladle based in 4:07 . 5. After putting the baking soda, turn off the stove and start mixing. After mixing, turn on the stove in low heat again and begin mixing on the stove again to get the best texture. After doing this, your dalgona mixture can already be put at a non-stick surface. 6. According to 6:56 : Put oil on the surface where the dalgona will be put so that it will not stick. Same goes for the object that flattens the dalgona. 7. Also another important thing, make sure that you let the dalgona cool down for 10 to 20 seconds, so that it will not stick to the presser based in 4:58 .
