*Gourmet Tuyo*
6 pcs tuyo
1/4 carrot (sliced)
2 bay leaves
4-6 pcs chillies
3 cloves garlic (peeled)
1 tbsp peppercorn
1/2 cup olive oil
1/4 to 1/2 cup vegetable oil
1. Cut off the head, tail, and belly of the tuyo. This is optional but removing these sections reduce bitterness and smoke from frying. Set aside.
2. In a shallow pan, bring vegetable oil to medium heat, then gently fry the garlic, carrots, chillies, and peppercorns. Set aside and let cool.
3. In the same pan, fry the tuyo for about 4-5 minutes over medium heat, turning over regurlarly. Once done, you may remove the scales.
4. Place the tuyo and the other ingredients into a bottle, and add in the bay leaves. Fill with enough new olive oil to cover the contents.
