Making lard, also known as rendering lard, was part of the hog butchering process. Lard was a very important product as it was used as the cooking oil in the past. From fried chicken to fish to adding it to biscuits, lard was an essential to the farm family especially in the days before supermarkets. In addition to the lard came crackin's, basically what was left of the fat after the lard was rendered. Considered by many as a real delicacy.
And if you are interested in experiencing farm life in the rural south in the early 1900's, plan your visit now. School classes, tour groups, scouts, church and senior citizen groups are always welcome.

Stumbled across this video ...it brought back memories from growing in SC in the 60s/70s ... my dad had one of these cast iron pots and out saturdays were spent making Lard and Cracklins

Nicely done video with a lot of information. That's a twist you have there with adding water to keep it from sticking. We just start stirring as soon as its put on the heat. We too use a cast iron kettle but this year I only wanted to render the leaf lard so I cooked it down in a stainless pot on a turkey fryer, breaking tradition. We didn't cook the back fat. We also use a sausage press to squeeze, but I like your technique with the squeeze-boards. Neat idea, because our cracklins' are very compact and dense. If you used green woods above those fresh burning woods , you would have created Cracklin without that Pot. Plus you missed all that flavor all those woods produce.
