Making Meatloaf with Aunt Cindy

Aunt Cindy is whipping up a meatloaf with some leftover hamburger meat.
Granny gives it a thumbs up and says food tastes better when someone else is cooking it.
How do you make your meatloaf?

Made my Mother's meatloaf last evening. Her recipe calls for two boiled eggs placed inside of the meatloaf. I believe it's a "New Orleans" thing, as my parents both grew up in NOLA and it's where I was born. I start with a pound of ground beef and mix with a pound of ground sweet Italian sausage. I usually use Italian herb bread crumbs but didn't have any so I used crackers like you did. I added a bit of spices (Italian herb + saltnpepper). 2 tsp Crushed garlic, 1 cup chopped onion and a cup of chopped red bell pepper, 2 raw eggs, a little worcestershire sauce, and 1/2 cup of cream. I also added about a half cup of brown rice. I use an Italian herb tomato paste; about a tablespoon inside the loaf and then I pour the rest of the can mixed with a little water and a couple of tsp brown sugar and spread over the top. I bake mine at 350 for about 50 min. So delicious! I like the grated carrot idea...I will use it next time. Thank you for sharing your recipe. Signed: Another Gram~

Aunt Cindy! We do a few similar things, but never heard of the carrot or tomato soup! I use pieces of bread dampened with water. Great recipe you have and nice little vid, thank you, thanks gals, tc

That was wonderful!!! Loved watching you make it like my Mom did (but she would taste it to check if she liked the seasonings) …after see this and your comments about loving onions, I signed up to see you cook some more…I love onions in every thing and on everything…it was always a joke in my family when I was a kid that I would eat raw onions even on ice cream!!! (It was probably a few slices left on the plate after dinner) 🤭 Keep them coming, kiddo😘(I’m 79)

Plastic gloves works good for meat loaf keeps your hands clean. If you mix brown sugar and the ketchup together and put it on the last 10 minutes of cooking, make a glaze like in the restaurants or dinners. Looks like a good supper.

Memaw Dixie mostly quilts in the winter after all the gardening and canning is done. Granny’s hands hurt her too bad to quilt anymore. Please keep us updated on how your chemo is going.
