it's quite interesting for me to see this since I have a cookbook written by my great great nan. she always put the sponge cake into the brandy and biscuits into sherry, to allow them to absorb the liquid. she never poured it over the ingredients. and candied angelica is gorgeous! you really need to get some. so it's interesting to see a different take. thank you for this.

That would make a lot of sense, putting the sponge and biscuits into the liquid - it would make for a more even absorption. I really wanted to get some Angelica, but it’s next to impossible to find in Ontario, it seems. Next time…

They had tin mechanical egg beaters in Victorian time. It made the work a lot faster. Don't forget to chill your bearers and bowl before whipping cream.

I do have a manual egg beater, but it was at my family's cabin at the time. It definitely makes the work faster than by hand, for sure.
