Desde Uruguay, con mucho respeto, el ajo no debe dejarse dorar, cuando eso sucede es porque se quemó y es muy dañino para el estómago. Se pone en el aceite unos segundos y antes de que quede dorado, se le agregan los demás vegetales.

I could not eat street food in many countries. His helper scratched his arm and the cook scratched his beard. Same rag for hands, table and pan. I do think in some ways we are too germ phobic. Hand sanitizers everywhere and sanitizers used all over our homes. We build resistance by being exposed to germs but going from an antiseptic place to a very lax environment seems risky.
