Hi David and Nathan. So nice to see the two of you 'live' today and to see everyone having so much fun: only in the Caribbean. Islanders know how to make you welcome and feel at home. I have to say, though, that the cook should have pre-prepared some of the ingredients and leave some to cut up for the video. That was a lot of ingredients for their national dish. Only thing missing was a whole hot pepper. I can just imagine the aroma and the taste.😋. I think what the bartender described as brown down is actually stewed chicken where we brown the sugar in hot oil and then put the seasoned meat in it to cook. Anyway, go light on the drinks and remember to eat something as well. Never drink alcohol on an empty stomach. It looks beautiful there: beach and pool side by side. Hope you get a lot of interesting info for us. Enjoy Grenada, have fun, but above all, you and Nathan, take good care of yourselves. BTW: the reference to 'oil' in the 'oil down' is when the coconut milk boils down it produces the oil. 🙏🤗🇹🇹🇨🇦

We are not Creoles there are no Taino Arawak, kalinagoes or Amerindians in Grenada. We are pure Africans and we are Negroes. We do not speak or know or understand Creoles. Creole is a Dominican, Haitian, st Lucia, St, Bahamas, Trinidad and Tobago and other Caribbean thing. We don make Creoles dishes, never heard of them.

In Trinidad we refer to African influenced dishes as creole food. Grenadian decents make up a big part of our African population here in Trinidad. Along with Vincentians. So we know alot about allyuh.

@@Trinigrade01 dear Vincy are not African they are Fulanis or black Caribs. Creole is Eric William with curly hair. Dominican and St Lucians. Kalinagoes Amerindians and Taino Arawak. Negroes are not Creoles we don't even share a dna. Don't classified African as Creoles because we are not indigenous to the Caribbean or Spain, Portugal, Ireland and France.

I love this coverage - The Art of preparing #OilDown Grenada's national dish. Thank you for visiting our #SpiceIsle The skin of the vegetables used in the preparation such as breadfruit & green bananas are boiled and feed to the pigs... hence why their(pigs that are butchered) meat is "sweet"

Just for the record, dumplings are not the most important ingredient in Oil Down. The most important core ingredients of Oil Down are breadfruit, taro leaves (a.k.a callaloo or dasheen leaves) coconut milk, turmeric, salt, spices and seasoning. These are the core ingredients that must be present for it to qualify as being Oil Down. There are other important ingredients such as some form of corned meat or fish, or chicken, dumplings, green bananas, carrots, half-ripe plantains, etc. But these can vary from person to person based on preference. I like to add equal amounts of curry and turmeric in my Oil Down and a little bit a sugar - just enough to create a slight, almost imperceptible hue of sweetness.

Hey David, thanks for visiting Grenada, video was cut short we want to see the final dish and see you taste it. I didn’t see you wash hands, hopefully you did in the beginning 😊. The video was great I think the chef should of thought the local name for some of the ingredients for example: Dasheen leaves aka Callaloo. The peppers: seasoning peppers. Just my two pence lol hopefully you film more dishes and scenery of my beautiful island ❤❤

28:41 No. It's not actually saffron. We just call it that. And I bet lots of Grenadians don't actually know that what we colloquially call saffron isn't actually saffron and that real saffron is actually a very expensive spice. What we call saffron is actually turmeric.

I am from London, U.K. but also of Jamaican parentage. Wonder why there is not many other Anglophone Caribbean national dishes is not part of the main staples in the Caribbean restaurants and takeaways in the United Kingdom, examples Bake and Shark (Trinidad and Tobago), Conch Stew (Bahamas), Coucou and Flying Fish (Barbados), Doubles (Trinidad and Tobago), Fungi and Pepperpot (Antigua and Barbuda), Goat Water (Saint Kitts and Nevis), Green Fig and Saltfish ( Saint Lucia), Mountain Chicken (Dominica), Oil Down (Grenada), Pepperpot (Guyana), Roasted Breadfruit and Fried Jack Fish ( Saint Vincent and the Grenidines)?.

Actually, it is not saffron but turmeric. Tumeric is a ground tuber that has the same rich cadmium yellow colour as saffron. It has nutritive and medicinal properties. Locals also call it saffron.

saffron and turmeric are two different spice. Dont confused it. Yes they both give a orange, yellow color but in Grenada we have both and the turmeric grows wild everywhere. Ginger as well. For the oil down we put both turmeric and saffron

@2075 Let me help you out! I have eaten breadfruit several different ways: boiled, and fried. However, it was while on a visit to Jamaica that I had roasted breadfruit on an open fire. When I ate it, for the first time I understood why it was called breadfruit because it resembled the texture of freshly baked bread!😋😋

I know after the Great Apocalypse Event of 2059 we lost/will lose a lot of digital and other records but sheesh! That is no reason for a young time traveler from the future like yourself to be asking such a question. You could have easily spent just a tiny bit of your time now in the past to research and find out that roti is a flat bread and not ... this! I'm sorry you feel that way but respectuflly you realize this food is made for the Show right? Like they specifically create it for the purpose of filming and me being involved. Its like you think I just walk up randomly while they are cooking and start filming and stick my hands in things. Same in Barbados...everything is planned well in advance and is done specifically for the purpose of filming content. Why would the chef "control" me when we are trying to film an episode for my channel?

Too many ingredients in the pot. By the time it's done it won't be oil down it would be cookup. I use just breadfruit, dumplings, saltfish or smoke herring and chicken, coconut milk with fresh tumeric. And let it make oil. Nice impressive try but I won't like it.

It was my first time trying it and it was pretty good but I'm sure there are some incredible recipes out there. The only solution is to eat more Oil Down and I have no problem with that 🤣❤️🔥 Thank you for sharing Doreen!
