To avoid that oil splashing all around , before pouring the oil into pan make sure that your pan is not wet ,so for that first you have to heat the pan than pour the oil and also the spatula you use should be completely dry. Hey you can actually grind that khara masala and keep it in jar ... this is what my mom do.. and put that powdery Masala in meat ( lamb ) or anything like you need to put in .. like kaabuli channe... just like you making it ..
