I have the same bread machine. I've been wanting to make rye bread. Thanks for your effort and perfection on the recipe. These machines work nice for making dough to make buns in the oven and dough for pizza. Cooking is art. Baking is science.

The yeast can become activated at between 135 and 145 degrees Fahrenheit for 15 minutes to 30 minutes without any harm. If it's too cold, all of it will not work, and the bread might not rise. If the yeast is activated and the loaf cools too quick it will create a suction within the crust and will pull in the top. That's like putting warm liquid in a jar and then putting the jar in the refrigerator. It pulls the lid down tight. The yeast makes CO2 gas which will collapse when chilled. It pulls inward in the bubble spaces in the dough.

When you measure dry ingredients you should use a measuring cup for dry ingredients. You are using a measuring cup for wet ingredients. Maybe that is why you’ve been having problems? I’m seriously thinking I need to get a bread machine! Thank you for this great video. The bread looks delicious!

Don't use a measuring cup for dry ingredients -- use a scale. 130 grams is a sifted cup; that way you don't need to sift and you will always be consistent.

This is an old video but when I saw using a liquid measuring cup for flour, I had to comment. I also prefer weighing flour, so I convert my recipes to grams.

I have a bread machine and I love mine. You need to have a different cup made for dry ingredients. The one you’re using is for wet ingredients. It does make a difference when you are baking. Good luck!

Nice Rye Bread I too have tried so many rye recipes. I just purchased a new machine to replace my older model. I followed your recipe decreasing the yeast to 3/4 TB and added 3/4 tsp ground caraway (found on Amazon) in place of fennel (don't like the taste) I did use the dough cycle and baked in the oven to give the bread a more artisan appearance. The bread was very good...nice for sandwiches and toasting as well. My new machine is a West Bend Hi Rise, it has two paddles and produces a nice traditional horizonal loaf. No, I don't work for West Bend or Amazon! LOL Thank you for sharing your recipe!

Just curious if you ever tried using the 'whole wheat' cycle for this recipe? The cycle is longer so the flour has more time to absorb liquids in the recipe resulting in a better rise and bake. Rye flour is a whole grain similar to whole wheat that may benefit using the ww setting. :)

Measuring dry ingrediends in a lquid measuring cup can make the amount of flour off by more than 26%. When baking your really need two different sets of measures. One (like the glass pyrex) and the other for dry ingredients that is leveled off to get the right amount. Both types of measuring cup hold the same amount, but the weight can differ greatly and make your ruin your recipe. I learned the hard way that when making homemade bread you really need to invest in an kitchen scale & weigh your ingredients to get the best results. They only cost about $10, but they make all the difference when baking. Thanks for the recipes and research.

We can't really see what the bread looks like b4 you eat it. a) salt and yeast should be equal proportionately. b) just use 300-320 ml of water for 4 cups of dry flour. c) never, never let the heat out when in the baking process. d) let rye bread sit for hours after coming out of the baking process; overnight is good. You have a great recipe; tune up the procedures and you will get bakery quality bread every time. P.S. rye is like whole wheat ( whole meal ) so set it to whole wheat.

Just bought an elite gourmet breadmaker machine. I made rye bread yesterday. The loaf was very dense. The bread machine rotated in circles while kneading the rye dough. The loaf was half the size of white bread. I used the recipe in the owner's manual. My question is, is the machine supposed to move that much while kneading or did I make a mistake with the rye flour? I just poured it into the measuring cup because the package was small. The loaf is edible but very dense.

Thanks for watching! I did another video, not on breadmaking, but on a noisy bearing. I found that the paddle bearing got noisy after soaking the bread pan with water after baking. Now I just rinse it out thoroughly after each use. I found an owners manual on line. Let's try this: RYE Bread for Bread Machine 1-½ cup water 2 tablespoons olive oil 1 teaspoon salt 1 tablespoon brown sugar 1 teaspoon ground fennel 1-½ tablespoons caraway seeds 1 cup rye flour 3 cups bread flour 2 teaspoons active dry yeast Add liquid ingredients to pan, then add dry ingredients (except yeast) to the pan. Using your finger form a well (hole) in the top of the mound of flour. Pour the yeast in the well. Snap the pan into the breadmaker. Select Basic setting. Choose crust color (I prefer “Light”). Press Start button. Machine will run for 3 hours. When the “remaining time” indicator shows 1:54 left, remove the pan, tilt the pan to shift the dough away from the stirring paddle and remove the paddle (to keep a large hole from forming in the middle of the loaf). Shift the pan to center the ball of dough in the pan, then place the pan back in the bread machine. (1:54 is chosen for the time to remove the paddle because that is right after the last stir.

Thanks for this. I love the Polish Rye bread I buy from the shop and wanted to make it in my machine. I have also removed the paddle before baking as I don't like the big hole it leaves. One thing about the yeast. All my recipes in my bread book use about 1 to 1 1/2 teaspoons of yeast so 1 tablespoon seems a lot. Do you know why this is. The flour is about the same amount as yours.

Yes, I've been told that I'm using too much yeast. The recipe works so well I'm afraid of ruining a batch. I think I should try reducing yeast incrementally.

Having said that. I have looked at the rye recipes and they say 2 teaspoons so don't reduce it too much. Rye bread must need more yeast than wheat bread. I haven't made the rye recipes yet because the book says you need the model with the Rye program on and the special rye paddle but it should be alright with your recipe because it is only 1 quarter Rye. I'm going to try it.

The settings on my machine doesn't have numbers. I just use the "Basic" setting which run for a total of 3 hours. The only other setting I've tried is "Quick" which runs for 1 hour but requires a recipe and yeast designed for the quick setting. I only tried it once and it worked OK. I prefer the "Basic" setting as that produced the best loaf.

It took me a while to fine tune my rye bread recipe. After some years I discovered that the huge package of yeast from Costco has gone bad after 3 years! I'm back on track using smaller jars of yeast and storing it in my freezer. Good luck!
