Thanks for the tip on the Bacardi daiquiri mix. I have 25 pounds of frozen strawberries so I will have the seeds in my next batch but I am going to supplement with several cans of the daiquiri mix to give me a very straight forward berry flavor thanks again I enjoyed the video

Started this recipe and followed to a T on Saturday. It is now almost Wednesday and no movement in the air lock still. Seems as tho these Bacardi mixers have changed ingredients and will no longer work. I was so excited.

what temperature was your mixture when you added the yeast? if too hot or too cold, it will kill the yeast. also did you add the corn sugar?

Using 3 to 6 pounds of frozen organic strawberries makes more sense and is far more economical. Most people are not spending 50+ dollars for anything most cases to make wine. Also, Super Kller K.C. will clarify your wine much faster, if you want a younger wine. Just my opinion from the average Joe.

Bacardi Frozen Strawberry Daiquiri mix contains Potassium Citrate. It is listed on the can in the ingredients section. Is that not considered a preservative?

For our purposes if it doesn't hinder fermentation we're happy. It appears to be used to adjust PH lowering acidity to add a tartness to the product. Of course if you can't tell the difference between a product that lists it and one that doesn't it may be naturally occurring or such a small amount as to be inconsequential.

If I make only 2 gallons of wine rather than 6 do I need to fraction out 1/3rd of the packet of yeast?

No. Yeast is cannibalistic. Any extra yeast will act as yeast nutrient. Better to use too much (over-pitch) than not enough (under-pitch).

those 64 oz containers have 1.25 lbs of cane sugar in them. That should be enough sugar to make wine
