Anecdote time: I am a shift lead at papa johns and we have a little old man who orders one of these every other day. His name is Cowboy Dave and he calls them Papapitas no matter how many times we call them papadias. He's very sweet and always wears a cowboy hat. Maybe someday I'll make this improved version and take it to him.

Fun fact: folding pizza is not at all unusual in Italy, especially in Naples where 'Pizza portafoglio' is one of the most famous snacks, and it is just a pizza folded twice. What may trigger some Italian about a papadia are probably the toppings, I don't think I have ever seen bbq sauce, or chicken tbh, on pizza here in Italy.

When using a home oven I have a few recommendations. If you really want to use tipo 00, either add 2-3 Baker's % of sugar or buy flour that has added amylase (or add it yourself!). Otherwise I would sub for regular bread flour (and bump hydration up ~3-8% for a similar consistency). The reason it doesn't brown as much in the home oven is that tipo 00 is the finest inner-most part of the wheat kernel, and doesn't contain as much damaged starch, and also doesn't contain as much amylase which can convert the damaged starch into dextrins and then to glucose. Glucose is one of the reducing sugars that is involved in the maillard reaction - browning - and helps to explain my suggestions :)

Awesome comment! It's not the first time I hear this either; someone else suggested it's the secret to New York style pizza - which is made in an oven, funny enough. It makes sense!

Btw. Folded pizza totally exist in Naples. Is called “pizza a portafoglio". It translates to "wallet pizza" and it's a very cheap and common street food.

There's also a good chunk of people who eat NY style pizza that way by folding the slices, and it's common for greasier pizzas as well. I also know a lot of people from when I was in college who would get their 2 slice meals and put one ontop of the other to eat it, especially if they were in a hurry...but several just preferred it that way.

I'd love to see a series just like this but you also try to match the same price point as restaurants. (Feels like a hardmode of this challenge, it'd be cool to see strategies and multiple attempts at balancing the budget to stay under the maximum while trying to achieve the best quality.)

Yeah the thing that bugs me when joshua roasts these fast food chain is his expensive ingredients and very long prep and cook time..if he can match the speed and price point of a fast food restaurant while still make it better, now that’s amazing

I had an ex that used to make "Italian burritos" but he cooked them more like enchiladas. Anyways, it was hamburger meat, tomato sauce, and I liked to add ricotta for filling. You would wrap it with tortillas into little burritos in a pan, pour more sauce and mozzarella on top, and then bake it. They weren't bad.

You can find folded pizza like this in many Italian cities normally sold by street food vendors so they are easier to eat on the go.

They're way easier to eat while driving and you don't end up with a half a pizza left over at the end of your shift for the 3rd time that week so as a delivery driver they're great. You can get a different one each day instead of having the same pizza for 2 or 3 days in a row.

The pepperoncini is ths best part of a Papa John's pizza experience ! I ask for as many of them as they are legally allowed to add to my pizza box... on the exactly two times I ordered from Papa John's (they aren't in my area, I ordered while out of town).

FINALLY HE COMES AT ME BRING IT ON!!! Here is the defense from a Papa John’s GM lol: I will say. Whoever made that papadia was not the best. The dough was either upside down or over proofed, that’s why it was all splotchy and rubbery looking. The bacon strips on the smoky bacon papadia was not good. The owner of my franchise took it off the menu and told us to stop ordering it because it is not good. Also there’s not supposed to be chicken on it, just ranch base, Canadian bacon, onion, cheese, bacon strips, and honey chipotle sauce swirl. The dough is actually large dough Patties cut into quarters and rolled back into a dough patty. It’s smaller than a small pizza cause you want it to be super thin, you want the edges to be completely flat, no crust. Otherwise you just get a big bite of plain bread.

Former pj's employee here. Quick tip for folding: make 2 small cuts (about an inch long) along the crease line before cutting. Makes it "fold" more, rather than "rolling"

It's pretty apparent that mr. Weissman is not used to thinking in grams. Recipes where I'm from - Denmark - are usually stated in 10's, so the cheece would be just 160 grams instead of 162 grams. 1 gram of whatever is a really small amount so hardly worth measuring

hmmm i like this video but as a (former) papa john’s employee i would suggest adding a little sauce to the dough before cooking ofc but then putting more sauce on top before folding, because that’s how we make it in-store :)

A local place use to make these but they called them wedges. They had like half an inch of mozzarella, large pieces of fried chicken soaked in buffalo wing sauce, tomato's and lettuce and I was in heaven any time I ate one of those diarrheal coagulating diabetes loafs.

the whole world needs to simultaneously shift to metric for everything. The sooner this happens, for distance, weight, even temperature (you know that Celsius makes so much more sense), the world will be a better place! Why wouldn't we all be using a system that allows the measurement of freezing temperature of water to be 0 and boiling to be 100. Who doesn't want that!? :) stones, pounds and ounces needs to go, miles needs to go, cups as a measuring system needs to go, haha. Let's start a revolution.

In Italy we have "Pizza portafoglio", a steet food kind of pizza wich consist in a normal pizza coocked in a woodfire oven that gets folded to be handled and eaten on the go, besides of the ingredient this isn't so strange for us :D

We actually have something in Naples called “pizza a portafoglio” (wallet pizza) which is basically a small pizza, generally margherita or marinara, which you can eat folded in half or quarter you can eat on the go

As a driver for papa John's I can guarantee you that they didn't want to pick up your call, the bacon strips weren't actually microwaved but it's basically microwave bacon that we put through the oven cause of the baconmania event we did. But yeah they usually skimp on the toppings, if I couldn't make it myself and then get it for half price I wouldn't be eating them but since I can they're my go to.

In Italy there is actually a pizza called pizza a portafoglio which is a normal pizza folded in quarters so you can eat it while walking so it’s not that bad if you just delete every condiments that you put on that pizza if it is still a pizza

In my area it's weird... the big fast food chains beg and cry for business from the locals but you can't get ahold of them to place a to go order when you call ... but if you arrive in person, their restaurant is empty and they're chatting away amongst themselves and act surprised when you say you've been on hold for 20-30 min and you see their phone off line sitting on the counter. As you show them you're still on hold on your phone in real time. Call a mom and pop shop and they answer, remember your name and past orders, Thank you profusely for the support and welcome you back.

in Tunisia they call it Makloub! it's filled with meat ,salad ,sauces, and ofc mozarella cheese ! some like to use tomato sauce too to make it taste like a pizza!
