I love how you always stay true to recipes of other countries! And as a Spanish viewer I can say you did a great job! But actually tortilla a little less cooked, while the egg is still a bit liquid, is so much better! Creamy and soft, at least thatโs how must of us Spaniards prefer it!

In some parts of Spain (mostly the mediterranean coast) we spread some grated tomatoes on the bread and eat it with the "tortilla". We also put a tiny bit of virgin olive oil directly on top of the tomato. This way the "bocadillo" isn't that dry/hard to swallow.
We cook this a lot in the Philippines too. We call it torta. Sometimes, we add ground pork and carrots to the potato :) It's probably because the philippines was colonized by Spain for more than 3 centuries. Even the Spanish names of the ingredients are similar - patatas and sibuyas here.
I don't know how often you practise your Spanish but your accent is real good. I think you said you lived in Spain so it's impressive you haven't lost the accent and remain sounding very Spanish. Saludos desde Barcelona!! โบ๏ธ
