I finally tried an idea that I have been thinking about for years now. I kept the discarded skins and seeds from making blackberry juice, and dried them out until they were crispy. I broke the chunks down with a blender and mixed the chunks with wheat berries so the blackberry discard wouldn't gum up the flour mill. I am really pleased with the results and I'm excited to get experimenting with it. The resulting flour isn't particularly sweet but it has a good blackberry flavor and I'm guessing the seeds and skins are going to be a good source of nutrition during the fall cold and flu season.

I've cooked a couple of breads already since making this video. The banana bread turned out to be a tasty paring with the blackberry whole wheat flour. The sourdough bread is still in the oven but it smells fabulous. I don't think the flour hurt the rise at all. So far this has been a fun experiment. If anyone is curious about where I got the seeds and skins I show them in this video here from a couple years ago. This time I spread the berries and seeds out on a silicone mat on a baking sheet and dehydrated them in my convection oven until they were quite crispy. kzbin.info/www/bejne/i2XdlqCFrqh4bcU

i'll always have patience for whenever you upload, last month has been ridiculous for myself as well tbh. honestly that is a great idea, given that i'd imagine the flavor or some essence of it translates over into the baked good

Two weeks late to your comment but I'm checking back through while uploading a new video. Thanks for all the support. I don't wish bad months on anyone but sometimes its nice to know it's not just you somehow. We have been eating up the flour and it has been really good in everything we have tried from sandwich loafs to muffins to pancakes. I guess I won't give it a long shelf life test. I'll definitely make some more next season.

It sounds like you have a great plan and my patience has allowed me to wait for you because I know how life gets in the way! My first thought is to taste what you have. Do the seeds from the berries overpower the other flavors? Maybe, that’s good anyway.... I’m excited to see what you make and how it tastes! I prefer sweet over savory.

It is nutritious. I recently saw an article on blackberry seed flour about all the benefits of the antioxidants in it. I'm interested in stratifying them and sprouting them and eating the greens.

Thats really cool I wonder if you could do the same with other fruit and veg pulp after making juice like carrot pulp or lemon pulp

Well done. You named my 2 thoughts, muffins and pancake mix. Do you have an organic grain mill where you can get good flour? I can't remember at all but the cracked wheat berries probably last as long in storage as the dried blackberries do you figure? Thanks for doing this

It dries out a bit in the summer so it could do better.

I dehydrated it using my convection oven. So far I have tried banana bread and a simple sourdough that both turned out quite good.
