Recipe for Uzbek Pilaf on Nature
#### Ingredients:
- *Laser rice - 3 kg
- **Beef (thigh) ** - 3 kg
- *Orange carrots* - 2 kg
- *Yellow carrots* - 2 kg
- * Onions* - 5 heads
- * Garlic* - 5 heads
- *Cottonseed oil* - 1 liter
- *Flaxseed oil* - 250 ml.
- *Jack fat* - 200 grams
- *Chickpeas* - 300g (pre-soak)
- *Perel eggs* - 30 pcs.
- *Case* - 1 pc
- *Chili peppers* - 4 pcs.
- *Zira* - to taste
- *Salt* - to taste.
- *Milled black pepper* - to taste
- *Lemon* - 1 pc
#### Cooking instructions:
1. *Prepare the ingredients:*
- Soak the Laser rice in cold water for 2 hours.
- Cut carrots into thin straws.
- Cut the onion into half rings.
- Cut the meat into large pieces.
- Peel the garlic from the top husks, leaving the heads intact.
- Boil quail eggs and peel.
- Cut the kazi into rings.
2. *Heating the cauldron:*
- Heat the cauldron over high heat.
- Add cotton oil and linseed oil and heat well.
3. *Frying meat and onions:*
- Put pieces of meat in the heated oil and fry until golden.
- Add the chopped onions and continue frying until golden.
4. *Add carrots and spices:*
- Place the sliced carrots in the cauldron, stir and stew until the carrots are soft.
- Add zira, ground black pepper and salt to taste.
5. *Rice Introduction:*
- Spread the soaked rice evenly over the meat and carrots.
- Add garlic heads, chili peppers, kasi rings, chickpeas and lemon cut into halves.
- Fill with water so that it covers the rice 2 cm above its level.
6. *Steaming the pilaf:*
- Increase the heat to high, bring to a boil and simmer until the water has evaporated to the level of the rice.
- Reduce the heat to low, cover the cauldron with a lid and stew the pilaf for about 30-40 minutes.
7. *Final step:*
- Stir the pilaf thoroughly, add the quail eggs, then cover with a lid and let simmer for another 10 minutes.
8. *Serving:*
- Place the pilaf on a large platter, garnish with garlic heads, pieces of kaza and quail eggs.
