Malai Chicken
Serves 4
Step 1: marinate
Ingredients:
1 kg chicken drumsticks
1 tablespoon salt
1 tablespoon pepper
1 tablespoon coriander powder
Juice of half a lemon
1 tablespoon garlic paste
set aside to marinate minimum 30 minutes
Step 2: searing the marinated chicken
Ingredients:
3 tablespoons ghee or oil
1 star anise
2 cardamom pods
1 black cardamom pod
1 inch cinnamon
3 cloves
1 tablespoon ginger paste
1 tablespoon jeera powder
500ml whole milk
8-10 cashew nuts paste
Half teaspoon nutmeg powder
1 tablespoon kasuri methi
Method:
Heat ghee in the pan, add the cardamom and cloves. Add the chicken once the fragrance from the spices is released. Cook the chicken stirring occasionally till light brown. Add in 1 tablespoon jeera powder and 1 tablespoon ginger paste.
Once ginger is cooked and chicken is browned add in 500 ml of milk and immediately after paste of 8-10 cashew nuts blended with water.
Step 3: bringing it together
It’s important to stir it frequently once the milk and cashew paste is added to avoid the milk splitting. Once the milk reaches a boil lower the flame and allow to simmer until chicken separates from the bone. Now add in the kasuri methi and nutmeg. Simmer till the gravy consistency is pasty turn off heat and serve garnishing with fresh cut chillies and coriander.
