Malaysian Favourite Butter Prawns

Egg floss butter prawn is one of the very popular dishes that you can find at local seafood restaurants. These prawns are coated with a floss-like egg texture that is very tasty and delicious. This recipe is super easy to make at home.
Recipe:
400g Prawns, clean & pat dry
2 tbsp cornstarch
1/2 tsp salt
2-3 Thai chili
5 garlic cloves
1 strip curry leaves
1 tbsp sugar
Salt taste
1/3 cup cooking oil
3 tbsp butter or margarine
4 egg yolks

Butter Prawns" Method: 1. Clean and pat dry the prawns. Season with salt and coat with cornstarch. 2. Fry the prawns for 2 minutes and set aside. 3. To prepare the sauté ingredients, in a bowl add Thai chili, chopped garlic, curry leaves, salt, and sugar. Set aside. 4. Separate the yolks and whisk them. Then strain the mixture, keeping the whites for other uses. 5. Heat a wok and add oil and butter, stirring until the butter is melted. Slowly drop the egg yolks to create a thin egg floss. 6. Keep stirring until the oil bubbles up, then add in the prepared sauté ingredients. 7. Cook for 1 minute until aromatic, then add the fried prawns. 8. Stir to mix well combine with the butter oil. 9. Transfer the prawns to a colander to drain the oil. 10. Transfer to a serving plate and serve immediately.
