If you’re wondering what fresh kimchi tastes like instead of store bought, this video should be pretty helpful for you!
Mama & I made sure to provide measurements & step by step directions so that you can replicate this VIRAL kimchi in your very home. Keep in mind that we use 7 medium sized Napa cabbages for the measurements.

Here's the written recipe for anyone who wants it: Mama Kim’s Kimchi Recipe(1 cabbage small batch): Ingredients: • 1 Good Cabbage(about the size/length of a head, try to find one with leaves that aren’t too thick) • Coarse salt • 1 medium sized potato(about the size of a hand) • 1 medium sized onion • 1/3 cup of whole garlic • 1 thumb sized knob of peeled ginger • 3 spring onions • 1 small to medium sized daikon radish(depending on how much you want) • 1 3/4 tbs fish sauce • 1 tbs tuna sauce • 1 tbs Salted shrimp • 1/2 cup Gochugaru (more to taste) Instructions: 1. Cut off the base of the cabbage. Slice vertically down the middle of leaf, then into desired size 2. Rinse the cabbage leaves 3. Put into large metal bowl and generously add salt 4. Mix Salt and cabbage together 5. After 1 hour, move the leaves from the top to the bottom then rest for an additional hour 6. Rinse cabbage leaves twice then drain for 30-60 minutes 7. Peel potato, cut in half and steam in pressure cooker for 3 minutes 8. Once tender mash the potato 9. Slice the onion(it will be blended) 10. Slice the green onion vertically then into 1/8ths 11. Peel the radish and slice into preferred size 12. Blend onion, ginger, and garlic with fish sauce and tuna sauce 13. Mix blended vegetables with chili powder, and salted shrimp 14. Add fish sauce and mashed potato 15. Mix in the cabbage 16. Taste to see if it needs anything 17. Mix in radish and green onion 18. Transfer into container/jar and press down so its compact. 19. Seal the container 20. If you want to eat it not fermented then store in fridge 21. If you want it fermented, place cabbage protector leaves on top and leave out for 24 hours(longer depending on how sour you want it, no more than 10 days) then store in fridge

thank you!! and just a quick correction: they used 3/4 cups of fish sauce for 7 cabbages (~0.11 cup per cabbage according to the video). same with the tuna sauce, 1/2 cup was for 7 cabbages but i cant do the math for 1 😂

What kind of salt tho? Sea salt? Iodized salt? Other salt? Or does it matter?

Hi!! I doubt you'll get to read this but I tried Mama Kim's recipe. It's my first time to make kimchi and it's insanely better than store bought and restaurant kimchi!! I couldn't compute how much ingredients I needed for a smaller batch so I just followed this video's ingredients completely (maths ain't a friend of mine) and now I have about 15lbs of delicious kimchi in my fridge. I decided to make it because my store bought one had been in the fridge for a lil too long and fermented a bit, it was SO sour. I like mine a bit but not too much, though, it might have been easier to do if I had a blender!

I have to say I love you guys. This recipe for kimchi is now a hit with my wife who never usually eats it at all. I myself enjoy it a lot but I don’t like store bought. My wife doesn’t like store bought kimchi nor eats it at all till this amazing recipe. I’ve won my wife over to eat kimchi & she loves this recipe. Highly recommend trying this. I love south East Asian kimchi, Korean kimchi. We call ours in Cambodian (jrouk Spey) my mom makes hers with love like you guys. When we order these cabbage from other restaurants and they don’t have seasonings, we will take them and mix it with ours. You’ll be surprise the taste. Secret ingredients. So delicious! @@Eternal-xi2ni It went good for a first try. I cut their recipe in half since it was my first time. I checked on day 3 and it wasnt fermented enough, but I check tonight (day 6) and it was WAY too sour and did not have that umami sweet flavor I like in my kimchi. I added asian pear but I did not add any other sweetener. I was able to put some kimchi in a stew to eat it but other than that, I wouldnt eat it. I froze a bag of it and threw away the rest. Going to try again in a week :)

Hello! 🎀 this was my first time making kimchi, but it turned out a bit different than I expected. Everything was going great until I tasted the sauce, it was weird cause I used a different chilli powder than you did, and it tasted very weird. But I mixed it anyways and put it into a plastic box. I hope it will taste better after the two weeks or month. 🎀✨ but thank you anyways!
