Dima use dipping sauce for lechon kawali soy sauce with squeeze some lemon, coz you don't have calamansi there. and also slice onion with tomato mix it well. it's a good combination for lechon kawali. 👍👍👌

Hello, good morning Dima and family 😊 adorable niece and nephews😍 As I've seen some cooking videos of crispy pork, I think there are only a couple of steps that mum Natalia missed. Oh, half teaspoon of salt in boiling water is plenty. Anyway, letting the pork skin completely dry for at least 6 hrs (air dry is good) after boiling helps the skin to crisp up. No need to rub skin with anything.Then cut into 2 inches pieces and fry in plenty of hot oil (not boiling oil!) in a deep pan not frying pan, medium heat (stove). Must keep an eye as pork will cook in less than 10 to 12 minutes. Alternatively, she can cut the pork in two pieces and place the 4 pieces of pork in the oven, middle shelf, and cook in moderate oven temperature 160⁰C to 170⁰C for maybe 1.5 hours to 2 hours. Make sure you don't burn the pork skin 😅✌😁 Hope this help mum Natalia so that the next crispy pork will have crispy skin 😋👍Happy Monday 🤗🌈

to get the pork skin to be airy and pops like chicharon, you need to let it dry for few days in the fridge. the idea is to draw out water in the skin. the more dry the skin, the more crispy it gets. otherwise, skin will be tough as leather. at the same time use that time to marinate the pork meat with salt, garlic, peppercorn, bay leaf or some herbs. you can use soy sauce but dont put on skin or maybe just very little. when the meat has dried in fridge for few days you can now deep fry it or broil in oven just brush some oil on it. deep frying is the best choice because you need high temperature in a short time. if your oven or air fryer can reach high temperature, i think it can be done too.

Lechon Kawali should be deep fried. Aside from it will make the sking crispier, it will also allow the oil to cook the inside of the meat, especially with that thick cut. In most cases, you only need salt and pepper for boiling. But the most important thing is that it should be tender. Then it should be dry and cool before deep frying.

If you are going to cook lechon kawali that way, it is best to deep fry the pork in hot oil. A better way to do it is to slice the pork thinly before frying on the pan with hot oil. never put the meat on a pan when the oil is not yet hot. The skin will not be crispy.
