I love anything Mexican! This recipe for this Simple Mexican Salad doesn't actually include any meat in it. I was VERY surprised when Harold and my son-in-law, Shawn, both loved it even without the meat. Of course, you can add it if you would. It's a keeper in our eyes.

Thanks for this version. I am going to try this recipe, Mama Sue. I make one similar called Catalina Salad. You basically put anything you like in it, but you crush Fritos and leave some bigger pieces, and mix in. Then pour Catalina Salad Dressing in and mix. I leave the salad dressing on the side for those who don't like Catalina; but I can tell you, there's rarely any left. So good!

This looks yummy! I would omit Cumin and fresh tomatoes, and add black olives and about 1/2 cup of salsa. I love any tomato, except fresh cut...I know that's weird, you'd think loving tomatoes so much I would love fresh? Anyway, visiting my brother this weekend, and this will be Saturday nights dinner! Thanks for another good recipe!
