Hello friends, here is the recipe of Mandi Rice with Lamb shank, I wrote this out from my observations, as for garlic and green chillies he did not mention the actual amount. But from the look am sure you can guess roughly..I think garlic were 2 bulbs and green chillies maybe 4-5 pieces. LAMB SHANK * 2 tbsp ghee * 2 bulbs garlic * 1 1/2 onions cubed roughly * 5 green chillies * 4 pcs small birds eye chillies * 3 1/2 tbsp Mandi Spices * enough water to cook the shank * 5 pcs lamb shank 1 tbsp smoke flavour liquid 2 tbsp salt 1/2 tsp saffron powder Method 1. In a pressure cooker pot, heat the ghee until melted, saute * - * until fragrant , and add some water so that the spices does not get burnt. 2. Now pour all the water , smoke flavour liquid, salt and saffron powder, stir all together, add in the lamb shank and close the lid to pressurize the shanks until tender. NB: If you are not sure about the water, always cover till enough to the top of the lamb only. MANDI RICE 2 tbsp ENRICO ghee 18 pcs of whole garlic small bowl of onion cubed ( again I guessed must be 2 bombay onions ) small bowl of green chillies ( maybe 5-6 pcs cut roughly ) 4 pcs birds eye chillies 2 handfuls of black raisins 1 kilo of Basmati rice 1 1/2 jug of water 1 tbsp of Mandi spices 2 tbsp salt TOPPINGS 1 tbsp of ghee > smear on top of the cooked rice some saffron powder 2 tbsp smoke flavour liquid NB: When you put the toppings, please do not stir, let them incorporate into the rice slowly. Your cooking reminds me so much of my grandmother's. She always used to salawat every time she's adding a new ingredient and as she stirs. I remember helping her make this with the charcoal and that was always so tedious so the smoke flavour is super helpful 😂

Ma shaa Allah saya suka mandi rice. Tengok sadja pun sedap nya. Rindu rindu saya benar. One of my favorites! I used to eat mutton mandi rice when I was working in Doha Qatar. The taste is so pleasant and the aromatic smell is so inviting. Though I am from the Philippines and you are speaking in Bahasa Malayo, I understand most of the words you said maybe because of some words are very similar to my mother tongue "Bahasa Bajau Kegayan/Jama Mapun". Thanks chef, back in aussie they sold instant spice/ sauce which makes thing easier. Just cook the spice with meat and put in the rice then i cooked in pressure cooker. Glad if you one of those here. Cant find this instant in local arab stores. ✌🏻
