Here it is! The video you've been asking about. I entered the Mead House's "Iron Bee" Competition this year and had a great time. The competition was a secret ingredient based competition where they send you a specific ingredient you have to use in your mead. This years was "Fenugreek Seeds" and I was very lost in the beginning on what to do with them. I'm excited to share this whole journey with you. This video is starts at the creation of the mead and leads all the way until the competition and results.

3 Gallons of Water
8 Pounds of Honey
4 oz of Fenugreek Seeds (Made into Tea)
8 Pounds of Pears
Cilantro to taste

You should've malted the seeds and ground them, then put them in whilst ground for primary fermentation. They'd settle at the bottom, but the oils, starch and tannins in the seeds would diffuse (like your tea did) but give a roasted, malted flavour profile to the mead

I really appreciate you sharing your experience with the competition. I’m entering my first competitions this year, including the mead stampede! It’s always for friends and family to “like” my meads, especially since they are getting free booze. Getting this kind of feedback in invaluable.

I just started making mead!! I'm so excited and I've been binge watching your videos and gotten a lot of information. Thanks for that! So far we've made a Cyser (which turned out awesome) And we just started a traditional mead.

That sounds like alot of fun! Like drinking a salad.. I laughed because I have a mead I dubbed Stinky Feet Mead which everyone at work loved for some reason even after I warned them they will get a hint of dirty socks and athletes foot. It was very complex which started with honey and went down a road of spice, fruit and citrus and somewhere in the middle was a big WTF was that. Though if you read the flavor profiles of expensive $1000 bottles of wine its all pencil shavings, leather and dirt.. so wierd. I wish there was something local here like that. Another great vid I couldnt stop watching. Thanks for sharing!

I love using the Amoretti products in my home brew. I cant believe I never used it for my mead!

I cook with fenugreek really often, so this is cool to see. I'd think it would do well in a bochet or something piney and citrusy, but that's just me.

Very cool. I love that you took on that challenge. Looks like the pectic enzyme worked. Good job man!!! Really cool getting the Amoretti flavorings as well. I’m looking forward to seeing how you choose to use those. I made a clover traditional and and racked onto Amoretti Blood Orange flavoring in secondary. In secondary now so, can’t wait to taste that in a month or so.

fenugreek seeds... another thing to add to the list of foods I don't know about. I kinda think you went wrong with the cilantro. Stimulated the gag reflex first time I encountered it. guess its an acquired taste Maybe after you perfect your pear brew you should try a South American fruit called babaco. It looks like a ft long yellow bell pepper and is somewhere between pear and melon in flavor🤠

My take on that is drinking a salad=too much cilantro. Recipe seems good but maybe tone down the seed and cilantro notes a bit? Maybe make a tea with the cilantro and then add to taste? I dunno, seems fun though. Great to be able to learn along with you as always. I just made a 50% buckwheat trad yesterday.

Great coverage, thank you for sharing! I wonder if the “like drinking salad” comment came from a person who generally doesn’t like cilantro...? I understand that some people taste it differently than others. Kind of a love it or hate it thing. Good luck in the future!

Wish I was earlier to see this. PFC Mead (pear, fenegeek, cilantro) with like the army's private first class insignia and man made mead would have made for a gnarly bottle label.

I wonder about a fennel/anise bordering licorice mead. Fermented citrus is booboo but what about adding lemon balm or verbena or lemon grass

22:50 Hopefully you used the cilantro stems in something else! Many chefs actually use only the stems in recipes, as they are much more intensely flavored. This mead sounds good!

Perhaps the salad like flavor came from the way some people taste cilantro, as earthy and soapy. Depending on the genetics of their tastebuds, you might just have gotten unlucky with that.

I agree Jason, taste is very personal. I work in a dining establishment where I am asked, what's good all the time. I always say, it depends on the type of foods you like.

I was gonna put some cilantro in my Thai mead...really rather glad I didn't now. LOL It's pretty strange tasting anyway. Need to bottle it and forget it exists for some number of months.

Would be legal here in Oregon...and wouldn't surprise me in the least with all the extracts, edibles, etc available to buy. Not my thing though, so I won't be doing it.

Personal opinion, Amazon sucks and it's not only killing small businesses and local jobs its become the number 1 killer of made in America products. Don't get me wrong I've had to use it during this quarantine period but other than that I never buy on line unless I can order local products. I like supporting America's economy 1st and will spend extra money to get American made products. My parents bought 1 can opener when I was a kid and my sister still has and uses it they paid about what a china made one would cost now, difference is my sister still using American made one where the china made one will have to be replaced every year or 2. Americans take pride in their products buy American when ever you can even if it cost more.
