If u read the novel you'll understand it better. In the novel Maomao is somewhat emotionally detached. She doesn't really like Jinshi and that continues till like the 12 volume. There are times she's totally disgusted with him and hates him. Also spoiler cause this is what ruined their Romance for me.... Man forces himself on her. At one point Maomso tells jinshi he can have sex with her cause she wants to understand the biology behind it (not cause she likes gim) there r moments when she approaches gim for sexual things only cause she wants to study it.

I think at first he just enjoyed teasing her because that's how he is, when he realized she had a singular talent for identifying and neutralizing poison threats. Then at the garden party he had a Squidward's "oh no she's hot" moment. Finally when she demonstrated her realistic and down-to-earth worldview with the story about the freckles, he fell hard. As evidenced by the fact that he gave her the hairpin. Her smarts got him interested, her face got him enamored, and when she welcomed him home with that look on her face he became obsessed.
