Pudpod is a smoked fish patty from the Waray people in Eastern Samar, Philippines. It is usually made from bolinaw (anchovies), but can also be made from larger types of fish like tuna and shark. The fish is first cleaned and boiled and then the fins and large bones are removed. It is mixed with salt and calamansi juice and pounded flat into patties. The patties are then smoked on bamboo platforms over smoldering coconut husks for a few hours.
They can be eaten as is, but are usually braised or fried. They are served (usually with dipping sauces) as an accompaniment to rice or lugaw (rice porridge). They can also be eaten with other boiled starchy food like camote (sweet potato), balanghoy (cassava), and saba bananas.
Pudpod in Visayan languages means "to pound" or "to grind".

The thickness of coconut milk and the yellow colour of kalabasa is what I like from this ginataan recipes, plus the sitaw or any other greens and the leafy veggie , and your very unusual na sahog made of bulad this reminds me of belacan from indonesia which made of dried bagoong block , I love to try your recipes. Over all that is still as good and aromatic dish and distinctively pinoy ulam. Good food and tasty ulam indeed,... and by the way speaking of tasty food you might want to check my kitchen too, I have some tasty extra ordinary ulam that you might like, and please leave some ayuda (i'll be more happy) if you like my kitchen, have a blessed day ahead, mabuhay!
