The weather has been a bit odd this season here in the Blue Ridge Mountains of northwestern North Carolina, and I am getting a later start than usual in the short maple syrup season. After running 20 taps for less than a week, 115 gallons of sap have been collected, and it is time for the first boil of the season. Using my Smoky Lake Maple Products - Dauntless Evaporator, inside my small sugar shack (that I built from lumber I harvested and milled in 2022) it's a long day of pouring and filtering sap, and keeping the fire roaring in the evaporator.

Beautiful set up. What size is your sugarshack and what size is your evaporator? Please post you finishing the syrup. Love the set up.

Thanks! My shack is 12x12, I built it from lumber I milled from trees on my property. My evaporator is the Smoky Lake Maple Products Dauntless, the pan is 20"x48". I definitely plan on doing a finishing video this season.

Fantastic video thank you. I’m a very small producer I have 20 to 25 taps. And fairly new to this. So can I get it close to syrup and freeze it and then do it all together at the end of the season? Thanks Fred

Nice! Yeah I'm a small producer as well, and that's exactly how I do it. The finishing process is the part of the process I don't really enjoy, so I usually boil it down enough, freeze it, and then finish it all in one shot. I'm only usually running about 30 taps. I've never noticed any difference in the final product if I've frozen it or not. It definitely makes it easier when you can pick the time to finish.

Nice looking rig. Is there a gasket between the pan and arch?

Thanks! No gasket unfortunately. There is a little gap there, that if sealed, might help with efficiency. I've actually wondered about that since I got it 3 seasons ago.

We are not tapping ours this year. Looks like a drought again. I feel sorry for the people that might lose trees cause of that.

You must be in a hard hit area. We had a drought as well, but on the big old maple trees tapping them isn't much of a stress.

I'm going to boil for 1st time in my new dauntless. Poked a couple holes yesterday. Running a little up here in maine. Good luck to ya

Its my 3rd season with the Dauntless, it definitely beats the old homemade setup I had before that. Good luck this season, I hope you make a bunch of syrup.
