Do you stitch in the ditch around the block before you quilt inside ?

It can be done before, after, or not at all. It just depends on what you are going for.

What is the plastic for besides planning? Or do you use a laser from other side of sewing area?

It is just for auditioning your design prior to stitching it out.

Do you have to crawl under the long arm frame to rip out stitching mistakes, or is there another way?

You can pick out from the top or you can also wait until you are done stitching, remove the quilt from the frame and then remove the unwanted stitching.

How exactly did you get the marking that you mistakingly made directly on a quilt off again?

It depends on what marking tool you used. If you google it, you will find lots of answers.
