@Wally Banter Best banter I've seen in a while there. He was the head chef of a restaurant which had 3 Michelin stars for 5 years. The head chef at that level of catering will always be the restauranteur, so he was in charge of all operations. Although they may not have technically been his, they were in every other sense. The fact is he was trained to the highest level possible. He gave back his stars because he had won 5 knives and forks and managed to retain his 3 stars for 5 years. He had clearly demonstrated his ability and had nothing more to aim for. He had reached the pinnacle of his career. I get that this is an advert, so maybe he wouldn't put as much effort in, but the point that his teaching style is relaxed still stands. Who cares if it's because it's an advert? PS: Restaurants aren't awarded chefs. They are awarded Michelin stars.

I love how Marco constantly reinvents his approach to cooking. I’ve seen him make risotto recently and he threw in all the liquid at once and it turned out amazing. He has a knack for throwing recipes and traditional techniques out the window and that’s why I appreciate him. Like he says, “Cooking is a philosophy”.

People can say what they want about him using knorr stock, but i recently made a mushroom risotto and tried using a chicken stock pot. And it was fantastic. It was seasoned perfectly without adding any extra salt, just like he always says.

What I most appreciate about the Marco Knoor videos is that he’s legitimately trying to show you how you can cook like a pro at home. Explaining how his aldente would be raw in Italy and to cook to what YOU like, not necessarily a recipe. Can I say he’s the most selfless Michelin star chef? I love these videos.

He is a great teacher also. He gives simple information and delivers them perfectly. There is a reason why he is the best. And the people who are accusing him of selling out: All celebrity chefs are doing reality shows nowadays. MPW was just too early to that media attention. He is one of the pioneers of that attention. Think of it like some greatest bands, they don’t make hits or albums anymore but still they are special, legendary and always considered to be so.

I agree. It’s completely fucking stupid and utterly ridiculous to see any Michelin star chef and restaurateur to openly endorse and heavily utilise stock cubes. But at the same time it really doesn’t matter he’s teaching countless recipes in an easy to pick up fashion and is getting paid to do so. If you’re that disgusted by the product placement then you should: A) just don’t add stock B) use a different brand of stock just to spite them C) Spend hours of your life every single day making perfect stock from scratch for every single meal you cook and using varied meats and ingredients to enrich the flavour and balance of the stock to the quality and efficiency that can be expected of pro Michelin chefs in award winning restaurants. Except you don’t get payed for it and they do.

What's great about Marco is that he really understands home cooking. I watch other chefs' videos who often seem to use quite out-there equipment and ingredients, and it's sometimes just not possible to do their recipes at home. Marco uses more basic ingredients, only a couple of pans, and always makes a point out of talking about how to alter the dish to best suit what's available to you.

Marco is a guy that I found out about later in life but I am awe inspired by the type of chef he is. I try and soak up every word he speaks while speaking about cooking, while cooking preferably, but C’est La Vie.

For the longest time, when i was cooking something up at home I would follow a recipe to the t. I wouldn't deviate from it at all. Then somewhere along the way... i would start to tweak those same recipes. I just went with my gut. Its been really reaffirming to see professional chefs say "if you like parsley, add more parsley, there is no real recipe". Marco was the first chef ive ever heard say that. I like that. Cheers brother. We watch all the vids

Recipe for dough (flour to water) here in South Florida is 5:3. I usually have to add a lot more flour to compensate for the humidity. Trust your senses

Marco showing everyone 'why' things need to be done in a certain way. It's all about what is happening to the mushrooms. Not soggy but concentrated flavour. Great.

Everyone can learn from this chefs programs.....but honestly..I did learn so much and many things I get wrong and do it again in my home cooking., but never get tired taking my time and watch his programs. Great work chef....please keep up with good work and health!

No rules, what's not to love about the autumnal deliciousness of mushrooms, (food of the gods), and shallots (and for me a little garlic) - altogether heavenly, and with the best sensational oils, and of course homegrown parsley and thyme. Jason Bourne I’m assuming this was your first time watching him because that’s his signature doo since the 80’s when chef Ramsay was one of his apprentice. He’s kinda like Steven Seagal who never change style, length may vary but its always the same doo.

Its just a style of filming where they imitate a crowd’s perspective. If you’re in a crowd, you will not always be in the speakers line of site hence sometimes this is what you would see.

I appreciate him saying ultimately food should be cooked the way you like. There a place for traditional food, purist who say this or that isn't authentic. Coming from a chef with that kind of ability and accolade it's cool he will say make it the way you like.

I like how he absolutely hates the dogma of details. He very strongly wants you to express your creativity in your cooking, not be a robot following instructions. He's even slightly annoyed by his suggestions of what type variations of the recipe he would do.

as a guide this is a great way to make risotto mine turned out really tasty i had no packet stock but used some fresh frozen i'd made. Also added a chopped up slice of bacon i had lying around and garlic, onoins to the muchrooms n grated some hard cheese on it. nice.

He’s using the stockpots in place of salt. The stockpots give it more flavor than salt. Nothing wrong with that.
