肥媽Maria Cordero KZbin Live - August 15, 2020 Recipe English Version Pan-Fried Salmon Fillet Ingredients: Salmon fillet - 1 piece Salt - to taste Black pepper - to taste Butter - 2 spoonful Rosemary - 1 sprig Garlic - 4 cloves Method: 1. Defrost, clean, and pat dry salmon. 2. Due to the thickness of the salmon fillet, score 3 shallow lines on the skin side of the salmon fillet. This will cook the salmon thoroughly and not overcooked it. 3. Heat up a cooking pan, add in oil, sprinkle in salt and black pepper. Add in salmon fillet to the pan with the skin side down. 4. Sprinkle in more salt and black pepper on top of the salmon fillet. Add in butter, rosemary, and garlic. Fry until the skin is fragrant and crispy while drizzling the melted butter with a spoon over the salmon fillet. 5. Flip the salmon fillet over to the other side and fry until cooked. Flip and fry the sides as well. Transfer to a serving plate. Serve. Add in the remaining sugar in 2 parts at 1/3 each time and mix until frothy. 3. Add in cream cheese, vanilla extract, whipping cream, cake flour, and mix well. Add in lemon zest and lemon juice, optional. 4. Transfer batter into the greased cake pan. 5. Put in air fryer and bake for 30 minutes. Refrigerate overnight. Serve cold. For a conventional oven, bake at 180C until done. Soak and wash beef tongue with 2 tbsp of cooking wine and 1 tbsp of white vinegar. Rinse well and pat dry. In a pressure cooker pot, add in 1 whole beef tongue, 1 white onion, leek chunks, rock sugar, 4 tbsp light soya sauce, 3 tbsp dark soya sauce, 4 tbsp mirin, 4 to 6 tbsp sake, ½ tsp salt, 2 bay leaves, and enough water to cover all ingredients. Put the pot into the pressure cooker and set to cook for 45 to 46 minutes. If using a cooking pot on a stovetop, cook for 2 hours after boiling. When done, let it cool and remove the skin of the beef tongue. Reduce sauce. Serve (Please refer to video for accuracy and clarification.) 6:50 Beef ribs in cooking pot on stovetop method #2 Defrost and soak beef ribs in water for 15 minutes and rinse well. In a cooking pot, add in beef ribs, onion pieces, leek chunks, 2 bay leaves, 3 tbsp light soya sauce, 1½ tbsp dark soya sauce, rock sugar, 2 tbsp mirin, 3 tbsp sake, salt, and enough water to cover all ingredients. Cover lid and bring to a boil on HIGH heat then switch to LOW heat and cook for 45 minutes. After 45 minutes, switch to HIGH heat to reduce the sauce. Transfer to a serving plate. Serve. corn starch or potato starch, usually is corn starch is ok
