My brother made this for this past thanksgiving. It was a hit. Although I’m using your method instead of a whole chicken I’m using chicken breasts and have them marinating in the fridge. My husband will be very pleased. They talked about the chicken for weeks.

Why did you cook the chicken with the back side up?

Because the juices tend to sit on the bottom of the pan. Since the breasts are the driest part of the bird, I want them to absorb as much liquid as possible. Hope that helps!
