Nature is extravagant. This is what this tour has taught me. Firstly the food..we have become fixated with artificial flavours etc however, to witness food from ground to plate in its natural form is sensational. All these ingredients look brighter, fresher, cleaner and tastier. It doesnt take a lot to appreciate food from different cultures, it just needs an open mind and respect. Mark has done something spectacular here...he highlighted the immense beauty and simplicity of rural life in Thailand which I admit, I knew nothing of. I was drawn to plush foliage, the untouched untarnished unparalleled natural beauty of Southern Thailand. I watched this episode 4 times just to soak in the immense beauty, very often drifting into an imaginative world that placed me on that hammock right across the river soaking in the fresh air and beautiful rhythmic flowing of water. Mark...u have represented Thailand well..congratulations !!!

I am from Bohol Philippines and we have a lot of common dishes with southern Thailand. I remembered my mother's story about WW2 days when the Japanese invaded our country and my mom's family goes into the jungle to hide. She said that my grandpa used to harvest rattan shoots for food they called "uway". Also their source of light in the forest during night is a type of mushroom called amag.

This may have been the best of the series! But I think I will go back and rewatch them all because I loved each video.
