I used to live in Thailand... for nearly 30 yrs. actually, and I love Thai food. I think Thai food is probably the most savory and fragrant food in the world and I miss it so much. I love watching your show.... makes my mouth water just watching you cook all those delicious dishes. Thanks for doing these shows and giving instructions on how to cook them. Hi Mark. I was just browsing through KZbin channels about food. I have to say that I really loved the very authentic approach to sharing your love for good grub. I have already tried some of the recipes (ผัดกระเพราไก่ being a personal favourite) and the fact that you use the ingredients and utensils you'd find in a real Thai kitchen makes it easy for a Bangkok-based farang like me to go look for the ingredients and reproduce the wonderful dishes. I really like how you don't try to embellish the setting, but focus on the important thing... Cheers!

I was making this recipe tonight, and I thought I would revisit this video to say this: I have been making this dish on the regular since I first saw this video 6 years ago. So simple and perfect. Honestly, thank you for making thai food a regular in my life. One of my favorite dishes-- I highly recommend.

The ingredients are easy to understand but the portions are misleading. He doesn’t specify whether you use breast or thigh - in my experience thigh is juicer. He doesn’t explain the variances which can contain minced pork or beef. Any of these three proteins will work. He also crammed one hell of a lot of garlic and chili in there for one serving - depending on the size of your cloves and whether or not you’re using Thai garlic which has cloves that are a LOT smaller than regular western sizes, adjust to suit. Further, deglazing the pan by adding a splash of water is necessary to get that charred flavor from the sides of the wok. Prioritize sweet over savory as the peppery properties of Holy Basil will overwhelm the dish if you’re not careful. I’ve made this thousands of times and while this is a true to form street style recipe, that takes only a few minutes to actually cook, you need to be careful how much of each ingredient you’re using. I saw you using Chinese garlic (garlic that grown in China and imported here in Thailand) which is larger in shape but weaker taste and less fragrant and less spicy than Thai garlic. I reccomend using Thai garlic instead because it's more authentic and taste and smell even better and it's available almost every Thai fresh market , weakend, modern super market and it's cheaper thatn Chinese garlic.

I like adding my seasoning as fish sauce, oyster sauce, MSG, rosdee pork seasoning. This is the same way they do in the” ร้านตามสั่ง” restaurants. But this seasoning is only good for the ground pork version and the chilli and garlic also i have my own blend of it, i add normal chinese garlic then i add unpeeled thai garlic then the couple of red and green birdseye (the one u see mark use) then atlast i add this small chili’s called “ พริกขี้หนูสวน “ and pound it in pestle and mortar. i have no idea what its called in english but the literaly translation of that chili would be garden chili. Again this works only for pork. This whole thing that i told u would only taste good with ground pork shoulder krapow. Iam from thailand and this is my take on it and its more of a restaurant version and rlly unhealthy but if thats not a problem to u then u should rlly try it. Edit: serve the deep fried egg with “พริกน้ำปลา” in english it would be phrik nampla which is just some chopped red birdseye chili, chopped garlic, fish sauce and some lime juice mixed together and i like adding some chopped cilantro to it too but its not traditional so dont add it if u dont want to. The phrik nampla should be rlly spicy and do not water down the fish sauce when making this as all the flavor would be ruined.

Traditional Gra Pao calls for Holy Basil, but it's really hard to find. However Thai Basil works very well, and is what we use when we make this dish

Thai basil makes a good sub but it isn't the same. Holy basil has a lovely flavor but the leaves wild fast which is probably why u can't buy it at a normal super market. I encourage u to grow some yourself if you can. It's a must try!.

Wonderful and tasty recipe! I cannot find holy basil where I live so I ordered from Amazon Dried Holy Basil and I steeped a nice handful in a few cooked down fresh tomatoes first then added to the chicken, garlic & peppers, I did add a nice splash of fish sauce in the end..I love that flavor, I can't help it! :) So good, I could eat it every day! I often make this dish but never use sugar, and use nam Pla and garlic and shallots. One of our favourites using chicken thigh, breast, or any protein. Love your video! I love learning new recipes all over Thailand. (30 so e trips since 1987)
