Hey Mark. Here in north east England your vids nostalgically remind me of my times in Thailand. My thing was trying noodle soup in every restaurant. After watching you I end up making my own version topped with a poached egg produced by my own hens. Incidentally, freshness is the absolute key to top poached eggs - you can't fail just never place the egg in boiling water - just below simmering is best. Benj, Yorkshire.

Chinese food is the best stuff!! I haven't had the authentic stuff in about 12 years but I would love to go back someday. If you ever get the chance. Go see Nanping, China. That's where i'm from and it's beautiful!

oye pardna! not sure if you'll see this comment, but would love a video on tofu. taste, texture, uses.. a comprehensive look at this ingredient. It's not something common in the Caribbean, but I do know it's treated as potato and/or chicken when used in vegetarian dishes (on the islands).

Tofu is kind of an edible sponge- it will soak up any flavor you cook it in, or fry , bake, or braise it, always yummy

Mark Wiens, The Hoy Jaw dish is a traditional Teochew-Hokkien Chinese dish. In Chinese dialect it is called Hae Chor. In Mandarin language, it is Xia Juan 虾卷 (literally - prawn rolls).

Hoy Jaw is actually chinese sausage wrap with soybeans sheet stuffed with pork,crab meat (if you substitute crab meat with shrimps,you'll get Hae Guen /แฮ่กึ้น) , some water chestnuts and the sauce is plum sauce .I love this dish very much .

Mark...you should definitely come to India. ..again...but to the northeastern states....The food there will blow your mind.... I mean Blast ur mind.... you'll love the exotic culinary items these states have to offer...especially.. manipur...meghalaya and nagaland.

Mark Wiens yes... I'm from meghalaya...shillong. So when you were in nagaland... did you try any of their pork dishes??....They have a spicy pork dish which is made with habeneros(king chilli) and fermented soyabeans... If you had it ..you'll know what I'm taking about...plus many more items...anyways me and my brother are big fans..keep up the good work n if u do visit india again....Make sure you visit the north eastern states..like I said the food is amazing and is very different compared to what you normally get in the other states.
