I think she’s referring to the book because in the book there’s no love triangle between Anthony and the Sharma sisters. Anthony and Kate are attracted to each other and marry with Edwina’s blessing. But she could just be referring to courting in general since she put a lot of emphasis on marriage for her sister only to end up ruining it for her and marrying Anthony in the end

They seem quite sugary, I don't think it would be weird to say Edwina say this sort of stuff but Kate was more restrained with her lines and behaviour. I think season 3 takes place after their six month honeymoon, so maybe her character has changed a lot since being married to Anthony and she's softer? I know what you mean though. In the season 3 teaser with her and Anthony she seemed a bit more like her character was originally so maybe it is the lines they've given her to read
