Braising is a busy cook’s best friend, and here’s why: with little hands-on time and no special equipment, this “low-and-slow” method produces hearty, consistently flavorful main courses and side dishes that belie their ease. It’s also a great way to cook lean, inexpensive cuts of meat. In this episode, Martha shows you which cuts are ideal for braising and the best ways to cook them, sharing recipes for classic pot roast, braised cabbage with apples, and pulled pork sandwiches.

My mom did this with a pot roast every Sunday morning, covered with potatoes and carrots and onions, so that when we got home from church, the kitchen smelled wonderful, and it was tender as can be. Thanks for the memory!

mouthwatering! (hint: if you're cooking pork shoulder for guests and they arrive early, you can break it into a few pieces and use a heavy duty single blade mixer to 'pull' it quickly)

Don't ever remove the skin from the pork belly. Cook it and crisp it under the broiler - rubbed with salt. It doesn't get better than that. The Danish national dish served with cream of kale and small potatoes.
