Martha Stewart and Jacques Torres are two of my favorites! I met Jacques once while visiting his chocolate museum in NY and he is the absolute nicest person! My friend and I accidentally wandered into a class he was teaching, but rather than shoo us out, he welcomed us back into the test kitchen after the class was finished and shared a batch of freshly made truffles and stories about his family. We left very full and happy! 🙂

Martha's the gold standard and these recipes look DELICIOUS! That being said, it's 2023 and now we're more educated as far as cooking oils. Olive, avocado, and coconut are the ONLY OILS THAT ARE HEALTHY. Safflower oil, which was used in the Milk Chocolate Pistachio Tart, is unfortunately processed in a way that makes it highly inflammatory. Along with canola, sunflower, palm, palm kernel, and probably corn as well, avoid ALL of these oils. Look at the ingredient labels of foods you buy and avoid.
