You can add 1 cup shredded coconut to the filling while it is hot. Put filling in a bowl and cover with clear wrap and refrigerate. Put cold filling in cold pie shell. This works well not to get pie shell soggy. It is also good if you are using a meringue topping. You can use all whole milk and add a few drops of coconut flavoring too. If you want a more yellow color add a drop or two of yellow coloring.

Have you ever made a Millionare pie? If you like coconut pie you might like Millionaires pie . Its soooo delicious. It has fruit and nuts and whip cream in the recipe . I would love to make this pie, But....In The Netherlands we cannot get sweetened coconut We only have dried dessicated coconut, which is not moist and not sweet. What do I have the change on the recipe to make it a succes? 👋🏻

well you can make the dessicated coconut sweet by mixing it with a simple syrup and then slowly drying it in a oven. You dont really have to add the coconut flakes to pastry cream, but i see no reason why you couldnt just substitute the dessicated coconut for the flakes, the only difference I might see is the texture as the dessicated coconut is much finer (which may not be a problem if you want a smoother texture). for the topping perhaps you could try mixing the dessicated coconut (after you have sweetened) with candied or raw slivered almonds.

Liquid ingredients 1 1/2 c. coconut milk + 1 1/4 c. Regular milk+ 2 TBl coconut rum.. then he says total liquid 3 3/4 cup . That doesn't add up?

Butter adds additional fat, thus more silkiness and decadence. Think of milk vs cream.

Is this diabetic coconut cream pie? Only 1/2 cup sugar? Wow, sure doesn't seem very sweet. That's less than a Tablespoon and a half per slice -- if the pie serves six. Not sweet enough for my taste. Yes, the sweetened coconut would add a bit of sweetness, but would it really add very much? I would have to add more sugar.
