Some of these were from the comics (indeed, Thanos' ending uses panels from The Infinity Gauntlet graphic novel...), which just means that the people behind the MCU knew their source material. Most of the endings are based on where these characters were at this point in time as well.

Sun can't melt the infinity gems down. The gems are spread concepts of the universe itself, and if it wasn't for them, the universe wouldn't exist. The gems contain infinite amounts of energy, with that being said, it's obvious that the gems will not be melted down, but they will absorb the heat of the sun, meaning that heroes and villains will have to deal with the gems again. Throwing them into a black hole was a smart idea, specially for cap. The black hole won't destroy the gems, but they'll be redirected to another dimension where no one can use them.
