It appears a more polished/restaurant-grade recipe. But folks in hyderabadi homes, stuff nicely small brinjal and shallow fry them (in generous amt of oil) and the masala that comes out of baigan in the frying process, with tamarind water added later makes the thick gravy. That's what I recall. But maybe there could be various cooking styles house to house.

This is one. Of my favorite dish from childhood. In telugu it's called gutti vankaya curry.

hamre yha pe 4months ho chomase ka time hota hai usme baingan nhi bante hai or padwa yani Diwali ke next day baingan bante hai or meri mumma ko baingan bhut pasand hai vo kabhi kabhi cheat karke ghr pr nhi par bhar kha leti hai par ise baar total 4months unhone unki fav. sabji nhi khyi ise baar inke b'day pe padwa hai or use din mai khud apni mumma ke liye ye recipe try karungi just pray mai ache se bana lu kyuki mujhe cooking jada ati nhi par ye video dekh ke mai try karungi just wish ki mumma ko sabji pasand aye❤️

Mereko aaj pata chala ki baingan Hyderabad se hei varna mereko lgata tha ki baingan Gujarat se thei as it is grown in some parts of Gujarat. Thank you ranveer sir for knowledge. 🙏

Ise yahan karnataka me sukha bina greavy k bhi banaya jaata bahot hi tasty hota hai jo ki phalli, khobra aur til ko add krke banaya jaata north side kalonji me amchur ya aam ki khatayi daalte hai khathas k liye south me tamarind k do patte without seed daalkr piste hai masale k liye... Sabji? Arre yeh sabji nahi hai. Sabz means green , sabzi is a Persian term to indicate a dish with greens and/or vegetables with simple cooking where the vegetables are the star and main taste. Like bhendi ki sabzi. But bhendi bharwan is not sabzi. This Here is an eloborate totally diffrent method of cooking the main taste is not of baigan here.

Very nice receipe. My elders stuff the baigan too with the grounded mixture of the coconut, peanut and til and then shallow fry them before adding it to the gravy. Thank you Chef.

Ranveer, as Hyderabadi again who makes bagareh baigan regularly your recipe is perfect 👍. And the addition of little jaggery makes it taste better, the baigan must be fried as in any authentic cooking cutting corners will not help.
