Ingredients:
1 cup rolled oats
3 ½ cups water (adjust based on desired consistency)
¼ cup chopped onions (optional)
½ cup chopped tomatoes
½ cup chopped vegetables (carrots, green beans, peas, etc.)
¾ teaspoon ginger (chopped)
¾ teaspoon garlic (chopped)
1 green chili (chopped, optional)
1-2 tablespoons cooking oil (ghee or vegetable oil)
½ teaspoon cumin seeds
¼ teaspoon turmeric powder
½ - ¾ teaspoon red chili powder (adjust to your spice preference)
½ - ¾ teaspoon garam masala
1 teaspoon salt
Chopped coriander leaves (for garnish)
Lemon juice (optional)
Instructions:
Heat oil in a pan. Add cumin seeds and let them splutter.
Add chopped onions (if using) and saute until golden brown.
Add ginger, garlic, and green chili (if using) and saute for a minute.
Add chopped vegetables and cook for a few minutes until softened.
Add turmeric powder, red chili powder, and garam masala. Stir and cook for a minute.
Add chopped tomatoes and cook until they become mushy.
Pour in water and bring it to a boil.
Add rolled oats and stir well.
Reduce heat, cover the pan, and simmer for 15-20 minutes, or until the oats are cooked through.
Add salt and adjust consistency with more water if needed.
Turn off the heat and stir in lemon juice (if using).
Garnish with chopped coriander leaves and serve hot.
Tips:
You can adjust the vegetables according to your preference. Bell peppers, corn, or spinach are all good additions.
For a richer taste, use ghee instead of vegetable oil.
If you don't have garam masala, you can use a combination of coriander powder, cumin powder, cloves, and cardamom.
Masala oats can be enjoyed on its own or with a side of yogurt or chutney.
