@@zm8741 baking powder cant, but cooking soda will ok to use. But papadkhar have own quality/taste to enhance khichu taste so if possible add papadkhar. otherwise soda, black rock salt, etc.ok

Papad kharo is a seasoning that is used in the making of papads and traditionally used in khichu. Without it you can't make it to Khichu. Aapko kisi bhi indian grocery store me mil jayrga.

2nd step is nt necessary

Thanks for watching. In this recipe, we are not steaming flour in the pan. Hence, the 2nd step is necessary for smooth consistency and ensuring that it's thoroughly cooked. If we use less flour in the same water, stir it more rigorously, and then close the pan with lid to allow thorough steaming , then the 2nd step will not be necessary. I will post another Khichu video to show that method with a different recipe very soon.
