The problem I found with mash hopping is extraction efficiency due to the grains even with a full volume mash. Looking forward to trying incognito in a no boil.

I've been really wanting to explore this topic more. Glad you helped answer some questions on what to expect! I think if you're worried about mash hopping introducing too much bitterness, I've heard that using whole cone hops instead keeps that from happening.

Doing a heavy thiol hazy next weekend on the 7th to bring the new year in. Hitting it with 5 ounces in the mash hop. 3 cascade 2 saaz. Full incognito Citra and mosaic in whirlpool 20g each with 1 ounce of cryo Amarillo. 5 ounces of phantasm powder in whirlpool. Cryo hops in the two stage dry hopping as well with the cosmic punch yeast. Covering all the bases to see what happens lol 😂

@@cschendt2368 honestly it turned out crazy good. The hop flavor off incognito is insane! The guava scent from the thiols being released came through very heavy. Heavy tropical flavors, pineapple, passion fruit. With retrained floral notes from the Amarillo and mosaic. Really helped round out the hazy ipa hop profile.

I've got a pack of cosmic punch that I'm planning to use this week for an ipa. Planning a mash hop additionnof cascade... will use ahtanum and a little citra for kettle and dry additions... should be fruity! I didnt catch what you used for your mash addition.

So from what I've read the biggest advantage of kettle hopping is going to be when you use a thiolized yeast as it releases precursors that those yeasts can turn into thiols

Yep thiolized yeast has enhanced IRC7 enzyme activity that converts precursors to thiols and there are some strains that naturally are capable of the same thing but usually small amounts. There are also free thiols in some hop varieties

just found out your channel. great content, amazing production, dream gear. all awesome, congrats!!! if i can give my two cents, got a bit disappointed when you added the incognito with the mash hops. i'd definitely rather seeing your impression on the mash hops and incognito on two different batches. with both variables introduced together, it’s probably hard to distinguish what each of them brought up. keep up with the great channel, you just got a subscriber who will for sure go through all you videos! cheers from brazil.

I want to try Incognito but $15 for the equivalent of 4oz of t-90 pellets is kind of steep. I will probably give it a try but if it doesn't change my life I can't see using it on the regular

Are those yeast strains b-lyase producers? Without a fairly high enzymatic activity there is no need for thiol precursors

I am going to experiment with thiols in the next weeks. But i LL approach it differently. I just do mash hopping and try out different beer yeast strains as well as thiol wine yeast strains. Unfortunately i cannot get the irc7 crispr yeasts from omega since GMO is banned for consumables in Europe

Hey @Hops & Gnarly... Will Incognito add a TON of bitterness to my beer (like BeerSmith says) if I add the recommended 1 gram/liter to my whirlpool for 20 minutes at 170F? I'm going to brew my first NEIPA this Saturday, and would like to use Incognito, but don't want a 100+ IBU NEIPA, like BeerSmith says I'll have.

Negative. If I remember right you have to adjust BeerSmith manually to get the whirlpool calculations to actually work. I think it’s a checkbox in the equipment profile. When you’re actually using them I would suggest dip hopping so you don’t gunk up your kettle. Drop to 180/190 transfer about 1/3 to your fermenter add the incognito then chill the rest of the wort in your kettle. When it’s chilled transfer the rest on top and continue chilling on the cold side to pitching temp
