Filet mignon: black and bleu; ribeye: medium; brisket: low and slow, on an offset smoker. Grinding extremely lean meat is a waste of the meat. My favorite cut is a tri-tip, and for that: medium-rare, prepared on a Santa Maria Grill.

I understand your point about overcooking. But that is the only way my Dad can eat it and he deserves to be happy with his choice. Haha. When I was a kid, he called me a picky eater. You should do a video on picky eaters across age groups.

If some say you undercooked a steak while others say you overcooked, then that must mean you cooked it perfectly. I mean I love my steak medium-rare.
