Making biga for pizza is very easy. But you need to have some guidance and you need to respect some simple rules.
In this video I am showing how you can prepare a classic biga that you can use for pizza or for bread.
Stndard biga ingredients are:
Flour and then 44% hydration and 1% yeast.
For example:
1000 grams flour
440 grams of water
10 grams of fresh yeast.
Remember that to prepare classic biga you need the right flour!!

My second question is, refrement yeast is added while making the dough. So in this case how much poolish should i add while making the dough?

hi, i have a question?, incase i want to use starter, how do i incorporate the starter ? do i take a ratio or do i take a percentage from the total flour ?

@@abhispizza hi. Percentage from the total flour. Be careful with hydrations too.

@@italianpizzasecrets4761 so if i make a biga of 20% for 2 kg flour with a hydration of 44% flour 400 gms water 176 gms and starter 1% 4 gms
You should always over heat home oven for pizza - what?
