If you have chosen 5.6 Aperture, then there will be good depth of field. So in my opinion you can focus on the eye.

3:35 You Mentioned 85mm But, 85mm on Full Frame Body ?? or 85mm on Crop Body ?? btw, 50mm is arround 80-85mm on Crop Body so Should We prefer 50mm on Crop Body ?? I personally love 85mm more then 50mm because of Deep DOF

Use speed light with umbrella it's easy to carry. But definitely you need one person with you to hold the light. Another option is use reflector & try to bounce sunlight but for that also you need a person.
