I am a 60 year old woman (Aussie) who has lived in lots of different places in Asia/Sub-continent. I am so impressed with you!! I don’t say that often, particularly about TV chefs. I am always screaming at the TV when they wrongly present local foods in Asia and display their irritating lack of knowledge and sometimes their ethnocentrism. You defy all the stereotypes about travelling Americans, and you are so young! Your locals-level of knowledge about foods and ingredients is impressive. I also noted that even if you get to a country for the first time and mispronounce something, later on you have corrected yourself, that’s really cool learning and what travelling should be about. I just subscribed. Despite all my years travelling and working in those countries, somehow (for reasons, but too lengthy to go into) I never got to Sri Lanka. I am going in February 2020 for a food-focused month and can’t wait to try a lot of the foods you have listed. I used to live with a Tamil family in Malaysia, so I know some of them but not all. Can’t wait....thank you for getting me revved up to eat!

I love your accent. I love the fact you dont let certain things portrayed in the media deter you from exploring the world, the food and it's people. Watching you eating foods cooked in clay pots and plated on banana leaves, NOT just makes my mouthwatering, I'm practically drooling! SERIOUSLY ;-). That was great . I loved that little place with the poop floor. The blast furnace they were cooking on was amazing. Is it because we are from farmland that we refuse to let our baseball caps die ? a piece of advice from a local : If you like to experience real authentic sri lankan taste, you'd better avoid the star hotels. Most of the time, they customize their food in a not so authentic way, so that they are less spicy etc. and more closer to international tastes. That's mostly because foreigners can't kind of bear the strong spiciness in our food. Taste of the same food served at a star hotel and a local hotel may greatly differ. At least, that how it's for me. Stated this here as a help for tourists who are yet come to here in the future ❤️

Not surprise that you eat every meal with sambal. Did you take some sambal back to US for your Christmas feast? The restaurant is very facinating, with a traditional kitchen, dining on a tree house and a plate of rice with dishes that looks so delicious. The hoppers looks similar to Malaysian apom but our Malaysian version is sweet unlike the savoury Sri Lanka version that you enjoyed eating with sambal and curry.
