Having done these types of renovations myself before I can really feel for you when things get so challenging, especially when you are so exhausted. The reason why the earth always falls in your building is because you don't secure the excavation pit, i.e. you don't use wooden boards or posts. This is also a safety risk for you and the workers. It is also essential that you place a layer of gravel and sand under the water tank as a drainage and leveling layer so that the tank doesn't float up in heavy rain and you can place the tank level. It is important that there are 2 separate layers, sand and gravel, because only sand will be washed out by the rain. Even under the ground. Also check that all pipes are at a frost-proof depth of 80cm.

With renovating my house in Portugal I have learned that I build for my life and not live to build. So after a big breakdown I stopped building for almost a year before I could get myself to have a go again. Now I just work on the house when I feel like it.
