Mayan Grilled Baby Back Ribs. I took two beautiful racks of baby back ribs and grilled them, low n slow on the Argentine Grill with some fantastic Mexican flavors. Rub
1/2 cup sea-salt
1/4 cup achiote seed (ground) amzn.to/32TLFgG
Sauce Recipe
1 tbs allspice (ground)
1 tbs coriander seeds (ground)
2 tsp black pepper (ground)
1 tbs Mexican oregano
2 bay leaves (ground)
2 tsp El Yucateco Red Habanero Sauce www.shopelyucateco.com
2 tsp El Yucateco Chipotle Sauce https:www.shopelyucateco.com
1 3/4 agave nectar
1/4 cup blended prickly pear fruit amzn.to/3jyHYDb
Simmer for about 30 minutes, let cool before using.

we stayed at Tanque Verde Ranch in Tucson a few years ago and they had prickly pears growing all over the place.. they harvest them and sell the syrup.. they also make some great desserts and cocktails with it!

I've grown up in LA all my life, they grow on the cactus here too and especially in the mountain areas. I've never used em for cooking I have to try it. Great video and recipes

I once stepped on one of those prickly pears and I can tell you I was miserable for a few weeks. They're too small to get out and only time makes them go out of your body! Don't play around with those! We call them Indian Figs here in Portugal. Awesome video as always!

I grew up in Morgan Hill, CA...our neighbors had prickly pear cactus growing in their yard...we used to pick them (got poked a lot😁) but they were really good!😁😋

The ribs look delicious, Greg. Maybe your fourth book could be on open-air, live fire cooking. How is the burger book coming along? How about "Mexican Desert Dusk" for the cocktail? I googled it, and several of the pictures had a similar pinkish-purple hue to the sky at late sunset. Take care, and try to get out fishing when possible.

Those prickly pears are actually called Tunas in Mexico, and they are grown in the nopal, that is the green stuff, is different from a cactus, anyway great video bro. I love your grill.

Amazing recipe Greg!!! You nailed it once again. Brilliant flavors both on the ribs and the dynamite lime cocktail. One question, those fruits have seeds? We have something similar on my village on the island of Crete in 🇬🇷 but those are orange in color and are full of seeds.

Delicious ribs! Delicious cocktail! Reminds me of when I worked at a restaurant in Florida and we called it a Prickly-Pear Margarita. My suggestion for the name is "Ballistic Mayanrita".

Yes those fruits are sooo delicious,,,, but: you didn't remove the seeds, that are like "STONES",,, did blending it make it so it's then downable?

That red fruit, here in México is known as tuna (like the fish). The same fruit in green color and sour flavor is knonwn as Xoconostle. Both of 'em comes from the nopales cactus plant. Theres another similar fruit that come from the vertical cactus. Its called pitahaya. Its sweet and colorful, and similar in flavor than the Dragon fruit.
