In rocket spleef, face the horizon when deploying your elytra when the countdown hits 1, then try and stay in the air as long as possible by flying in circles, all while facing the horizon. When you eventually reach the structure, try to land as high on the structure as possible and jump the moment you hit the structure to get some height and deploy your elytra again. You use the emergency rockets when you've gotten too far down, you must face 90 degrees upwards and deploy your elytra for it to work and send you upwards. From the video, it seems like you were facing down sometimes so all the rocket does is accelerate you to your demise faster XD
